Mushroom Biriyani


Mushroom Biriyani (serves 6)
Ingredients : basmati rice : 4 cups(wash soak in enough water for 30 mins)
Mushroom : 1 box or pack
Onions big : 3
Tomato : 3
Green chilly : 5
Ginger garlic paste 1 spoon
Oil : 5 spoon
Ghee :1 spoon
Red chilli powder : 1 1/2 spoon
Coriander powder : 1 spoon
Garam masala :1/2 spoon
Turmeric powder : 1/4 spoon
Curry leaves : 10
Coriander leaves : 1/4 bunch
Mint : 1/4 bunch
Salt : to taste
For tempering : cinnamon, clove, bay leaf, cardamom, star anise

Method

Heat cooker add oil and ghee. when hot add the tempering items . then add onions and green chilly and half spoon salt. saute for 3-4 mins add ginger garlic paste saute till raw smell goes off. add tomato and saute until they r soft. Add half of mint coriander and curry leaves. now all the powder items (chilly+coriander+garam masala+turmeric) saute until raw smell goes off. then add diced mushroom pieces. saute for 5 mins then add the drained soaked rice to the cooker. check for the salt and add it to ur taste. keep on sauteing so that the rice dosn't stick to the bottom of the cooker.. saute for 5 mins. then add 6 cups of water. mix well and put the left over mint coriander and curry leaves on the top. close the cooker put the flame in medium and put the cooker weight. now leave the cooker in medium for 5-6 mins then put the flame in lowest for 8-10 mins. them switch off the stove. leave the cooker for 15 mins as like that. then open it and put fork and mix mix in such a way u wont break the rice. serve hot with raitha.
